This is my own creation, which I based off of things I've tried in the past. This makes a great side dish for air-fried chicken legs or thighs, or a nice steak! Play with the ingredients a bit to find new flavor combos. If you made too much, no problem! These will freeze well. If you keep them in the fridge, make sure to use them up within a few days.

Ingredients

  • 8 medium-sized golden or yellow potatoes
  • 2 Tbsp finely chopped cilantro
  • 2 minced garlic cloves (or 3 if you prefer)
  • ¼ cup diced white or sweet onion (or ½ cup if you prefer)
  • ½ small lemon, freshly squeezed juice (watch for seeds)
  • ½ Tbsp salt (or more to taste)
  • 1 Tbsp fresh-ground black pepper
  • 4 Tbsp salted butter
  • ½ Tbsp oregano
  • ½ Tbsp turmeric
  • ½ cup whole or 2% milk (add more if needed)

Cooking Instructions

  • Peel potatoes, and cut into large pieces.
  • Boil potatoes for 45 minutes to an hour
  • Remove potatoes from heat and drain the water (do not rinse potatoes)
  • Place potatoes in a large mixing bowl or pan
  • Add milk and butter
  • Blend potatoes until smooth with a hand mixer
  • Add salt, pepper, oregano, turmeric, and lemon juice
  • Blend until all ingredients are mixed
  • Add cilantro, onions, and garlic
  • Blend one more time until all ingredients are well mixed together.
  • Ready to serve!

Notes:

Increase or decrease individual ingredients as desired. Goes great with air-fried chicken legs!
