Ingredients
- 8 medium-sized golden or yellow potatoes
- 2 Tbsp finely chopped cilantro
- 2 minced garlic cloves (or 3 if you prefer)
- ¼ cup diced white or sweet onion (or ½ cup if you prefer)
- ½ small lemon, freshly squeezed juice (watch for seeds)
- ½ Tbsp salt (or more to taste)
- 1 Tbsp fresh-ground black pepper
- 4 Tbsp salted butter
- ½ Tbsp oregano
- ½ Tbsp turmeric
- ½ cup whole or 2% milk (add more if needed)
Cooking Instructions
- Peel potatoes, and cut into large pieces.
- Boil potatoes for 45 minutes to an hour
- Remove potatoes from heat and drain the water (do not rinse potatoes)
- Place potatoes in a large mixing bowl or pan
- Add milk and butter
- Blend potatoes until smooth with a hand mixer
- Add salt, pepper, oregano, turmeric, and lemon juice
- Blend until all ingredients are mixed
- Add cilantro, onions, and garlic
- Blend one more time until all ingredients are well mixed together.
- Ready to serve!
Notes:
Increase or decrease individual ingredients as desired. Goes great with air-fried chicken legs!
